Trendy Thursday: Swim Suit Cover Ups

Well, last week we talked about the swimsuit. So now its time to chat about the mom’s bestest friend, the cover up!
I love swim coverups so much that several of them have woven their way into my summer wardrobe. (Really, they were that cute!) A swim coverup is a great way to try something trendy that you might not normally try or to try a sundress that
might be just a smidge too young for you. When its just thrown over your swimsuit, you can pull just about anything off!
Here are my three favorite coverup looks:

  1. Going classic and sophisticated with a gauzy tunic like this one from Old Navy:On730460-00vliv01
    Athleta has
    an adorable linen one. Or go for a more exotic look with a kimono style cover-up. Or go luxurious with a silk tunic!
  2. Going sleek and modern with a maxi dress. This tube dress from Old Navy is classic. I have this maxi dress from Target and I wore it constantly all summer – not even as a cover up! It became one of my go-to outfits for summer and I constantly got compliments on it.
    The maxi dress is a prefect coverup –and feels so comfy to throw on after a long day at the beach. Personally, the tube top look is something I can only pull off as a coverup. Not a good look for me normally.
  3. Going cute and sporty with a little hoodie dress. Or this one from Old Navy. Or go cute and nautical with this hooded dress from Old Navy – or if you love just stripes in general,this envelope dress would also be a great coverup!

As much as I love to save money, I must admit I really enjoy eating out. My husband and I do our best to curb the temptation, leaving to special occasions and emergencies (read: nights where I forget to plan a meal, mess up a meal or otherwise find the meal I had picked out to be less than satisfactory for my present cravings). Eating out, though, is a huge money zapper, and you can save a good bit of money just by cutting down the amount of eating out you do per month.

A great way to satisfy the need to eat out without sacrificing the money is to create Eat Out meals at home. One that comes to mind is my mother-in-law’s recipe for a great Mexican dish. She prepared this for us a few weekends ago, and it was super delicious! This is a crowd-pleaser, easily feeding a hungry family, with inexpensive ingredients. Hope you enjoy!

Enchiladas

4 large boneless, skinless chicken breasts – cooked and diced

2 cans of cream of chicken soup

1 small can of diced (or chopped) green chiles

1 small can of sliced black olives

1 dozen tortillas (ie: 1 package)

1 pt of sour cream

4 green onions, sliced/chopped

2 cups of shredded Mont. Jack cheese (if you are feeling a bit sassy, substitute Pepper Jack)

2 cups of shredded sharp cheddar cheese

1) In a bowl, combine soup, peppers, olives, onions and sour cream

2) Add the Mont. Jack cheese

3) Place chicken in a separate bowl. Add 2 cups of the soup mixture to the chicken (reserve remaining 2 cups). Toss to combine.

4) Fill each tortilla with some of the chicken mixture, and roll the tortilla up. Lay each filled tortilla in a 9×13-inch pan

5) Top the tortillas in the pan with remaining 2 cups of soup mix

6) Sprinkle the cheddar cheese over the tortillas and soup mix

7) Cover tightly with foil and bake at 350 * for 40-50 minutes

Malvern Blooms!

Malvern Blooms is expected to bring thousands of people to King Street, including residents, people from other communities, and out of state visitors. Home and garden exhibitors, juried artists, craftsmen and store owners will set up along King Street, which will be partially closed. Local restaurants will be represented. FREE entertainment for all ages, children’s activities and seminars will be offered throughout the day. This will be a rain or shine event.
