Tasty Tuesday

Hello, friends! Another week of “Simple Recipes for the School Year” is now in session. I’ve been looking through my recipes, and I’m trying to compile a good list of recipes to get us started as the school year begins. I’ve shared 2 with you so far (if you missed them, check out the last 2 Tasty Tuesdays). My goal when the school year starts: simple, easy, no-fuss recipes that get everyone fed in a timely manner. Once I post all these School Year recipes, I would encourage you to do 2 things:
1) Print them out
2) Put them on a bi-weekly rotation.
That way, for the next few months, you’ll be set. No thinking. No agonizing. No slaving over a hot stove while your kids run amuck throughout the neighborhood.

We will eat. We will eat on time. We will eat well.


That is the School Year Menu Mantra.
So I have another great recipe for you today. It is one of those sinfully simple recipes that makes you feel a little sheepish once you’ve finished reading it. When I come across these recipes I hit my palm to my forehead and think, “Seriously? Why didn’t I think of that?” Why do we make it harder for ourselves, when the simple answer is ALWAYS the better answer?
My mom made this often when I was little. It makes your house stink a little bit – and if your children are a bit skittish around sauerkraut, it may not be for you. Although, I would say that the flavor of the meat is still wonderful, even if they pass on the kraut.

Slow Cooker Pork and Sauerkraut

  • 4-6 Center Cut Pork Chops, trimmed of fat (I use boneless, but bone-in is fine)
  • 1 large can of Sauerkraut
Arrange Pork Chops on the bottom of the slow cooker. Pour can of sauerkraut over pork chops. Cook on low for 5-6 hours (alter for your particular slow cooker). If you find the liquid gets low, add some water so that the chops are always covered. It will not alter the taste!

Notes:
The pork chops come out practically falling apart, and super moist. Some might slice an onion into rings and throw that in there as well, for a little extra flavor. As the Autumn approaches, slice up 2 or 3 apples to sweeten up the dish! Yum!
