Tasty Tuesday: Ridiculously Easy Oatmeal Spice Cookies

November 9, 2010

Since posting the Example Meal Rotation last week, I thought I’d give you a sweet treat to be adventurous with this week.

Now, I looked back over my Tasty Tuesday posts over the last several months, and I am about 90% sure I haven’t posted this recipe yet. If I did, and somehow overlooked this, I apologize.
Regardless, I will be posting it today because…well…it’s just that good. And with the holidays coming up, it’s wise to keep some easy and simple (and tasty and scrumptious and mouthwatering and…I digress) dessert recipes on hand. Especially cookie recipes. Between school functions, holiday meals, cookie exchanges, bake sales and just because you want to eat ’em, it’s the Dessert Season.
Growing up, I spent a lot of time at my friend Briana’s house. We still hang out regularly, but we are now the Mom’s, running after toddlers and trying to converse between breaking up fights over toys and feeding kids. Anyway, I loved hanging out at Brie’s house. I loved it for many reasons, not the least of which is that her mom would feed me every time I came over. She was always baking, especially if there was a sleepover happening. One night, she was making these oatmeal cookies that smelled SO GOOD while they were baking. And the taste? To die for! I begged and begged her to tell me the recipe. And when she finally did, my response was, “…that’s it…?”
Her response? “Yup.”
So today I give you the best, easiest and TASTIEST cookies you’ve ever eaten. When you see the ingredient list, you may have your doubts. But believe me. Your kids (and party guests and neighbors and tummy) will thank you!

Ridiculously Easy Oatmeal Spice Cookies
  • 1 bag/package of Oatmeal Cookie Mix
  • Ingredients your cookie mix calls for (water, eggs, oil, etc)
  • Ground Cloves
1. Mix oatmeal cookie mix with ingredients it calls for.
2. Add ground cloves. Start with 1-2 TBS. Shake on more. When I asked Brie’s mom “Well, how much ground clove do I put in?” She said, “When you think you’ve put in too much, add some more.” You’ll want AT LEAST 2 TBS, if not more.
3. Bake according to package directions.

I know. It seems too easy. And for some people who REALLY like exact measurements, step #2 may be hard to swallow. But I promise you that the cookies will be REALLY EASY to swallow!
If you don’t have cloves on hand, try using Pumpkin Pie spice. I did this recently, and it was really tasty.
And since this recipe is SO EASY, let your kids help! Even the little ones 🙂
Enjoy the cookies, and have a great week!
